Chef Marcel Taillefer
Chef Marcel Taillefer started his culinary career at the age of 12. His career spans multiple Executive Chef positions as well as the successful ownership and operation of restaurants in Canada as well as Bermuda. He studied at George Brown College in Toronto and is a Certified Red Seal Chef. Influenced by Ritz Carlton’s Chef Louis Diat’s French cooking style, Marcel blends this into his menus for Rawley’s Lighthouse 45 with flourishes of French cold-pressed olive oils, truffle oils, Herbs de Provence, and the restaurant’s herb garden. His French influences also feed his love of food plating with creations that are simple, yet visually appealing. In 1997, he was featured in Bon Appetit Magazines in BBQ issue, he was voted Orillia’s Best Chef in 2015, and won the Chopped Canada competition hosted at Casino Rama.
