Introducing Farm-to-Table Practices
To guide the creation of the new menu, Rawley has recruited Chris Locke Eco-Chef, formerly of Toronto’s first farm-to-table restaurant, Marben. But what is a farm-to-table restaurant, and how are we committed to this philosophy?
Farm-to-table restaurants prioritize using locally sourced, seasonal ingredients. We source our ingredients from local farms, butchers, wineries, breweries, and suppliers, as well as incorporating seasonal dishes.
Another pillar of the farm-to-table philosophy focuses on environmental sustainability. We use closed-loop zero-waste processes wherever possible.
